Todays recipe Chicken, Zucchini and Carrot Patties is something I through together before leaving for the pool on Monday.  I was able to shred the carrot, zucchini and slice the green onion before we left and placed it in a mixing bowl to refrigerate while we were gone.  The ground chicken was thawing.  There are many days that I start the prep of dinner before leaving the house.

Hi Everyone! Sorry I have been off the grid for a few days.  I overindulged for my birthday and have been laid up battling with a flare-up or inflammation.  It’s hard to believe that something as simple as a bit of rice and some pecans can cause this extreme flare-up.

Once we returned home while everyone took time to get cleaned up, I simply added the chicken to the prepared veggies, added some garlic and a small amount of almond flour.  Mixed it all up and made patties.  I do have to say they were pretty sticky.  But if you scoop up a small amount and drop it in a hot pan (favorite use my nonstick copper pan) it works perfect.

You will notice in the picture that the patties were served on cloud bread.   This is a delicious low carb bread made with eggs, cream of tartar, dairy free cream cheese and some seasonings.  This has become a staple in our house.  We use it for sandwiches, tacos, pizza and breakfast sandwiches and much more.

Have a beautiful day and keep cooking!
