Chicken, Zucchini, Carrot Patties

  • 1 lb Chicken, ground
  • 1 Small Zucchini, shredded
  • 1 Small Carrot, shredded
  • 2 Whole Green onion, sliced thin
  • 2 Whole Garlic cloves, minced
  • 1/4 cup Almond flour, fine If not AIP yoi can use 1/4 cup parm cheese here
  • Salt and pepper, to taste
  • Oil, for cooking


  1.  Preheat the oven to 375 - Preheat a large NON-STICK pan with oil covering the bottom.  A great oil to use is Epic brand lard.

  2. Mix all ingredients in a bowl

  3. With a spoon, scoop up approximately 1/4 cup and drop in a hot well oiled pan

  4. Brown on one side and gebtly flip over (this may be difficult since there are not bread crumbs holding it together)

  5. Place the cooked patties on a oarchment lined baking sheet and place in the oven to finish cooking

Todays recipe Chicken, Zucchini and Carrot Patties is something I through together before leaving for the pool on Monday.  I was able to shred the carrot, zucchini and slice the green onion before we left and placed it in a mixing bowl to refrigerate while we were gone.  The ground chicken was thawing.  There are many days that I start the prep of dinner before leaving the house.

Hi Everyone! Sorry I have been off the grid for a few days.  I overindulged for my birthday and have been laid up battling with a flare-up or inflammation.  It’s hard to believe that something as simple as a bit of rice and some pecans can cause this extreme flare-up.

Once we returned home while everyone took time to get cleaned up, I simply added the chicken to the prepared veggies, added some garlic and a small amount of almond flour.  Mixed it all up and made patties.  I do have to say they were pretty sticky.  But if you scoop up a small amount and drop it in a hot pan (favorite use my nonstick copper pan) it works perfect.

You will notice in the picture that the patties were served on cloud bread.   This is a delicious low carb bread made with eggs,cream of tartar, dairy free cream cheese and some seasonings.  This has become a staple in our house.  We use it for sandwiches, tacos, pizza and breakfast sandwiches and much more.
